The commercial baking process is normally associated with bread manufacture but in fact the baking process – the prolonged application of dry heat - applies to many other products such as cakes, pies, pastries and increasingly snack foods where the aim is to provide a healthier alternative to fried snack foods. The air filtration aspects are minimal because very little particulate matter is released in the baking process. There may be dust problems upstream of the baking process – such as weighing, blending and mixing. Sometimes there may be concern over dour especially spiced specialty breads such as naan breads. The solution would be a deep bed carbon filter with upstream protection in the form of conventional air filter products or an AAF OptiFlo RC.
